Sushi, a staple of Japanese cuisine, is a dish of vinegared rice garnished with vegetables or raw seafood. A variety of toppings may be used, including cucumber, avocado, seaweed, and tobiko (flying fish roe). In Japan, sushi is often paired with green tea, and some restaurants use vinegar-pickled ginger root as an additional palate cleanser. The ginger is called gari.
